Vodka

Our award winning vodka is inspired by the ingredients that make it: New York grain and Catskill Mountain Water. It’s grain forward flavor comes from the ingredients; soft red winter wheat and floor-malted barley. This is a classic European style sipping Vodka… Keep it the freezer and drink it neat. Gin

RVS Gin begins with our ultra-smooth full-bodied Vodka. It has eleven botanicals including wild foraged juniper which grows in our pristine valley reflecting our local terroir. The local juniper berries have a very complex, fruity flavor and less heavy pine taste allowing the other 10 botanicals to shine. This is a low bitters botanical bill, making it a perfect Gin for Martinis, Collins, and Gimlets, while still standing up to tonic in a G&T or the Campari in a Negroni. (Bottled at 80 Proof)


Barrel Finished Gin

RVS Barrel Finished Gin has been aged in our American Single Malt Barrels for one year. This Gin expression hits the fine point between aged and fresh spirits and is a “Whiskey touched Gin” rather than a “Gin flavored Whiskey.” Our current expression of BFG is a High-Rye mash bill, so there is an extra hint of spiciness on the finish. Magnificent as a neat sipper, or use it for an extra layer in your Negroni’s (Bottled at 80 Proof)

SINGLE MALT WHISKEY

RVS American Single Malt Whiskey is 100% NYS floor-malted barley, mashed in a Lauter-Tun (i.e. never distilled on the grain or yeast) small-batch, double-distilled in a copper pot still. Fermentation takes place in traditional wooden washbacks made of Douglas Fir. The nose is lightly sweet, grassy and vanilla, while the taste is well balanced and creamy with spice on the finish. Normally served neat, it also makes a fine Rob Roy, Old Fashioned, and Manhattans. (Bottled at 90 Proof)

 

APPLEWOOD SMOKED SINGLE MALT WHISKEY

RVS Applewood Smoked Single Malt Whiskey is also made from 100% NYS floor-malted barley, however, a portion of the barley is toasted using applewood smoke. The process is the same as our American Single malt. The nose is smoky and malty with caramel and vanilla. On the palate it is full-bodied and remarkably smooth, well balanced and creamy with the smoke returning on the finish. Meant to be served neat in a Glencairn glass. (Bottled at 90 Proof)

APPLE BRANDY

This European style Apple Brandy is made from 100% New York State apples, which undergo a very long fermentation period. It is slowly distilled twice in our copper Pot Still, then aged in new charred American Oak barrels to produce a rich dry brandy. The apple aroma is unmistakable, and it carries through to the palate along with baked apple, toast and hints of dried fruit and almonds. The warmth stays with you through the long finish. (750 ml – 90 proof)

EMPIRE RYE WHISKEY

 

RVS Empire Rye Whiskey is made from 100% malted NYS rye. It captures the peppery flavor and finish of Rye, but without the burn that many unmalted Rye Whiskeys have. The rich vanilla and caramel of the barrel rounds out the flavor profile. As with all Empire Ryes, it is barreled at less than 115 proof. Lower barrel entry proof extracts more water-soluble compounds from the oak. Like our Single Malt, our Rye is never distilled on the grain. (Bottled at 90 Proof)


elderflower liqueur

RVS Elderflower Liqueur is from fresh, hand-picked elderflower blossoms foraged at the height of their blooming season. The remarkable color comes from the pollen and nectar and gives a honey-like note to this floral Liqueur. Our expression contains less sugar and has a slightly higher alcohol content at 44 proof than other brands. The lower sugar also helps to avoid over sweetening when mixed with sparkling wines and in cocktails. Seasonal Product (44 Proof)


raspberry Flavored Vodka

RVS Raspberry Vodka is an incredibly smooth full-strength 80 proof Vodka. No sugar, color, or flavor is added. The color comes from infusing whole raspberries, and is amazing. It’s a dry Vodka and makes a fantastic Raspberry Vodka martini, but for a sweeter cocktail, there is nothing like a Raspberry Vodka Gimlet (375 ml – 80 proof)

ELDERBERRY LIQUEUR

 

This delightful Liqueur is made using our premium, grain-to-glass Vodka,  and then infused with wild elderberries that we pick here on our mountain farm. The rich tannins create a long dry finish. Serve neat or use it to layer color and flavor in your cocktails. (375 ml – 44 proof)
