About RVS:

Rock Valley Spirits is a craft distillery on a Catskill Mountain Farm.

We use local grains, apples, and wild foraged ingredients to create small batch spirits in our copper still. Visit the distillery to discover more about the art and science of traditional artisan distilling.

To us, the most important distinction of true Craft Distilled Spirit is that it is made from beginning to end here on premises.

  • Copper Pot Distilled
  • We start with pure Catskill bluestone water
  • We use traditional floor malted grains for exceptional flavor and depth
  • We grind our grain as it is going into the Mash Tun for freshness
  • We mash in a traditional Lauter Tun
  • We never distill on the grain to produce a purer cleaner spirit
  • Fermentation takes place in traditional open top wooden washbacks
  • Every batch is double distilled & tasted for purity by us personally
  • Mashed, fermented, distilled and bottled here on the premises
  • Never chill filtered which provides more flavor and mouthfeel
  • We never, ever use purchased neutral spirits
  • Family owned and operated
